(Peter the) Magnificent Chocolate No-Bake Cookies
Ingredients:
• 2 cups white sugar
• 1/4 cup unsweetened cocoa powder
• 1/2 cup milk
• 1/2 cup butter
• 1 teaspoon vanilla extract
• 1 pinch salt
• 1/2 cup chunky peanut butter
• 3 cups old-fashioned cooking oats (if you only have quick-cooking oats, that’s okay)
Directions:
1. In a saucepan over medium heat, melt the butter. Then add the sugar, cocoa powder and milk. Bring to a slow boil, stirring occasionally. Boil for 1 minute, then remove from heat and stir in the vanilla, salt, peanut butter and oats.
2. Drop by rounded spoonfuls onto waxed paper. Allow cookies to cool for at least 1
hour.
Susan’s Sweet White Chocolate Confection
Ingredients
• 8 oz. white chocolate
• ½ cup chocolate or butterscotch chips
• ½ cup raisins
Directions
1. Break white chocolate into pieces and place in a microwave safe bowl. Heat chocolate for 20 seconds, remove from heat, and stir. Repeat process until chocolate is melted.
2. Place a sheet of parchment paper, waxed paper, or greased foil on bottom of cookie sheet. Spread melted chocolate onto pan.
3. While the chocolate is still warm and soft, sprinkle chips and raisins over the top. Allow to cool, then break into pieces.
Edmund’s Peanut Butter Delights
Ingredients:
• 1 cup semisweet, milk, or dark chocolate chips
• 1/4 cup butter
• 1 tablespoon vegetable oil
• 1/4 cup peanut butter
Directions
1. Coat a six-cup muffin tin with cooking spray.
2. Place chocolate chips, butter and vegetable oil in a microwave-safe bowl. Heat chocolate for 20 seconds, remove, and stir. Repeat process until chocolate is melted.
3. Pour about a tablespoon of the melted chocolate into each muffin cup.
4. Melt peanut butter in microwave, 30 to 40 seconds. Spoon about 1 teaspoon of melted peanut butter over chocolate in each muffin cup. Top with another tablespoon of chocolate.
5. Chill in refrigerator 30 minutes, until set.
Lucy’s Teacakes
Ingredients:
1 3/4 c. flour, sifted
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. butter
3/4 c. sugar
1 egg
3 tbsp. milk
1/2 c. Citron (or candied peel), finely chopped (if you don’t have citron or currants, use raisins or any other dried fruit)
1/2 c. currants
1 egg white, slightly beaten
Sugar
Directions:
1. Combine flour, baking powder and salt.
2. Cream butter; gradually beat in sugar and egg. Add milk, citron, currants and flour mixture. Blend thoroughly. Chill.
3. Roll dough between palms of hands into balls the size of walnuts. Dip tops in egg white, then sugar.
4. Place with sugared side up 2 inches apart on greased baking sheet.
5. Bake in 400 degree preheated oven for 12 to 15 minutes. Makes about 3 dozen.
