Quick and Easy (Gluten Free) Peanut Butter Cookies


A simple cookie that is absolutely delicious, and gluten free!

This soft, chewy, very “peanutbuttery” cookie really is quick, easy, and delicious, and it’s gluten free!

Ingredients:

  • 1 cup peanut butter
  • 1 cup white sugar
  • 1 egg
  • 1 teaspoon baking soda

Directions:

  1. Preheat oven to 325 degrees F.
  2. In a medium bowl, mix the peanut butter, sugar, egg, and baking soda together until well blended.  Cover dough and refrigerate for one hour.
  3. Roll dough into 1 inch balls, and place on ungreased cookie sheets.  Flatten with a fork dipped in sugar.
  4. Bake 6 to 8 minutes until browning. Cool on cookie sheet for at least five minutes.
