Campfire Cookout Recipes


"Mozzarella Skewers "

Ingredients:

  1. 2/3 cup vinaigrette dressing
  2. 1 Tablespoon McCormick Grill Herbs
  3.  2 jars of Mozzarella pearls
  4. 24 cherry tomatoes
  5. 1 red onion, cut into 1-inch pieces
  6. 1 sourdough baguette, sliced

Directions:

  • Soak 10-inch bamboo skewers in water, at least 1 hour prior to grilling.
  • Stir together salad dressing, herbs, and 1/2 cup water. Set aside.
  • Place cheese and vegetables in a re-sealable bag and pour in marinade. Seal and marinate in refrigerator or iced cooler for 1 to 4 hours.
  • Thread the skewers by alternating vegetables, cheese, and bread.
  • Brush bread with some of the leftover marinade mixture and save the rest for garnish.
  • Lightly oil the grilling grates and place the skewers on the grill. Cook for 2 to 3 minutes per side, turning once. Bread should be toasted and cheese softened. Serve right off the grill drizzled with additional marinade.

"Fish in the Fire"

  Ingredients:

  1.  4 pieces of trout
  2. Lemon pepper seasoning
  3. ½ stick of butter or margarine, softened
  4. ½ stick of butter, melted
  5. 1 sliced lemon

Directions:

  • Season fish and set in aluminum foil. Slice softened butter and distribute evenly over fish.
  • Seal aluminum and place on grill. Let cook for about 7-10 minutes on each side.
  • Once you remove fish from grill add lemon slices as garnish and use melted butter for dipping (optional).

"Coca-Cola Chicken"

Ingredients:

  1. 1 Bottle of ketchup
  2. 2 cloves of garlic, crushed
  3. 1 can of Coca-Cola
  4. 1 tablespoon of seasoning (McCormick Grill Herbs recommended)
  5. 2 pounds for skinless chicken

Directions:

  • Mix ketchup, crushed garlic, Coca-Cola and seasoning in a large Ziploc bag or Tupperware container. Place chicken in bag and marinate in refrigerator or cooler for 2 hours.
  • Place on the grill for 20-30 minutes, or until cooked thoroughly.

 

"Banana Boats"

Ingredients:

  1. 4 bananas
  2. Chopped peanuts
  3. 1 bag of marshmallows
  4. Hershey's Chocolate syrup

Directions:                                     

  • Wrap each banana individually in aluminum foil.
  • Add marshmallows, chopped peanuts and drizzle with chocolate syrup. Then place on grill for 5-8 minutes.
